Aprés Eggs with Slow Cooked Tomatoes
Our tomatoes, red peppers, onions, garlic and spices are cooked down slowly so the flavours really get to know each other...Then we stir in some rainbow chard, pop a poached egg on top, add crumbled feta, a spoonful of pro-biotic yoghurt, a squeeze or two of lemon juice, a sprinkle of sweet smoked paprika, a few slices of fresh chilli and finished with some freshly chopped parsley and coriander. Delicious with a slice of our warm home-made bread.
